The Weekender: Bikini Martini

If you haven’t noticed that the tropics are completely in this season, just take a look around…or at least a drink. While we adore our precious Bahama Mamas and our delectable Piña Coladas, this weekend’s libation – found at RA Sushi – has us reaching for our sunglasses, tanning oil and time-off sheets. However, please give us at least another month till we grab those bathing suits. For now, the Bikini Martini is as beach-ready as we’re getting.

.75 oz. Kai Young Coconut Shochu
.75 oz. vanilla vodka
1.5 oz. pineapple juice
.5 oz. simple syrup
.25 oz. blue Curacao
Splash of lemon-lime soda
Pineapple wedge for garnish

Pour all ingredients into mixing tin with ice. Shake and strain into chilled cocktail glass. Garnish with a pineapple wedge and dash of blue Curacao.
