DLT: Why chicken fingers and not follow in your father’s Buca di Beppo footsteps?
Justin Micatrotto: Buca was amazing and we all learned so much. Finding a brand like Cane’s with our personalities was truly the perfect match. Plus, your ability to blow away people’s expectations of a ‘fast food’ restaurant is there every day.

What’s the secret to the RC legendary sauce?
We scale the sides of Kilimanjaro and gather a rare root… Really, you can’t expect me to ever reveal that secret!  I can tell you this, you’ll start eating it with your finger and before you know it, you’ll be buying extra to use on pizza and salads. Okay, we tried.

How many chicken fingers do you eat weekly?
6, I get a Caniac combo once a week. Sometimes two, 3 finger combo’s during the week because I need my fix.

When not in the mood for Cane’s, what’s your favorite breakfast spot?
Any place with dessert-style pancakes. My wife and I love red velvet pancakes the most.

Coffee or tea in the morning?
Diet Rockstar. The crew knows instantly if I haven’t had one.

For news, internet or paper?
Internet, got hooked on the iPad.

What’s your favorite sit down dinner spot, other than of course, Cane’s?
Culinary Dropout. We always have a good time there even before the food arrives.

What’s been the most challenging for you as a restaurateur?
Getting every crew member to feel how important they are.  A cashier or drive thru person is going to affect the day of 100’s of people each shift. There’s such an opportunity there and it’s way more important than what we do as partners in the company

Before you were the leader of the local Caniacs, what did you do?
Working in a kitchen in Redondo Beach, CA

What’s your favorite holiday tradition?
Getting kicked out of the kitchen to the couch with my brother and nephews to wrestle.

What’s your favorite city in the world?
Florence, Italy – a true treasure on earth.

Where have you not traveled but would like to?
New Zealand. There’s lots of things I want to jump off of out there and it’s all surrounded by gorgeous landscapes.
