Chipotle Barbecue Sauce from The Ritz-Carlton Dove Mountain in Tucson.

Ingredients
1.5 cups Ketchup
1/4 cup White Wine Vinegar
1/4 cup Molasses
1/4 cup Brown Sugar
2 tablespoons Chipotle puree, strained through a chinois
1 teaspoon Liquid Hickory Seasoning
Fresh Ground Black Pepper
Dash Fine Sea Salt

Preparation
Mix ingredients in large mixing bowl. Add ground pepper and salt to taste. For additional heat, add additional Chipotle pepper. Use as a marinade or baste. Makes 2.5 cups.
